New Mexico chile powder is produced from dried chiles (in contrast to most standard “chili powders,” which may be a combination of ground chiles, oregano, garlic powder, and cumin). This spice has a mild heat level with pungent, earthy and fruity undertones. It is commonly used in enchiladas, sauces, and ground beef taco filling.
